Green salad, red beans, sausage and rice, corn bread, fried catfish, jambalaya, chicken and sausage gumbo. Just another typical Louisiana mid-afternoon snack!

last meal I ate, I haven't eaten since the early 80s when I was living in Des Moines Iowa


went to an IHOP with church group this AM.  Kids had "kidnapped" freshmen to take them to breakfast and then Youth Group and Church.  Standing tradition. 

saw on "light menu" an entree - fish w/ hollandaise sauce

"light" ???????

any way had egss benidict, first time since early 80s.

have go wait about 21 years for the next time I guess.

My ideal Sunday starts off with a leisurely brunch with the girls, gossiping and sharing news and giggling over this and that. And in this perfect brunch, the meal is pretty much always the same: Eggs Benedict, either the traditional kind or a different version with smoked salmon, brie mushrooms .... my mouth is watering just thinking about it. It's definitely my favourite way to have eggs. And I rationalize my choice by telling myself that eggs are good for me, English muffins are fairly low-cal, ham is a good source of protein and the hollandaise is ... well ... a source of calcium, I guess.

I'm going to hate myself for not allowing ignorant bliss when it comes to brunch, but I have to know. Am I right to rationalize, or is my favourite breakfast food terrible for me? Does traditional Eggs Benny have:

a) 968 cal, 65 g of fat
b) 892 cal, 71 g of fat
c) 642 cal, 43 g of fat
d) 550 cal, 26 g of fat



Erm ... it's b) 892 cal, 71 g of fat. Ignorance definitely is bliss -- I don't know how I can eat this again in good conscious knowing what it's probably doing to my arteries. The good news is there's a whole shwack of low-fat Eggs Benny recipes on the internet, though you'll have to make them at home. Do you know of any healthy recipes? And if so, are they just as good?

Nah - It's the habits that make or break ya'. Eggs Benidict every now and then won't hurt you. Savor every bite and sop the plate with some buttered toast... just not every day. Sometimes the mental and emotional health effects of a meal one enjoys MUST be considered.   Good!

Toss a few of steamed Aspargus spears on the plate with the Eggs Benedict, it goes with the Hollandaise sauce and adding a veg to the plate makes it seem more healthy!!!

Unwisely, I went to the works canteen at lunchtime. I didn't really fancy anything on the menu, so settled for a pumpkin and feta risotto. OMG. It looked as if someone had thrown up on the plate. And it didn't taste or smell much better. NOT recommended!

It's always a good day when I remember that the lid of the casserole dish is just as hot as the base! Free-range chicken casserole in the oven. Well, I suppose it isn't free-range, because it's in the oven....

Home made chicken soup - try it, it's easy -

3 cans of chicken broth
1 big can (or 2 small cans) cream of chicken
1 whole rotisserie chicken - separate chicken by hand and be anal about separating bones - you don't want to hurt no one.  remember to remove skin (you can leave it in for more flavor and remove it later, although this isn't necessary.
Half a yellow onion diced (more or less according to taste - half doesn't seem like too much even if you ain't into onion)
at least 2 good sized parsnips
at least 2 turnips
at least 2 good sized carrots.
3 whole celery stalks (or more)
1 yellow squash
(you can add pretty much any kind of vegetable you want)
a sprig or two of rosemary (removed form the stem)
a good amount of basil (i used 2 heaping tblsps) dry, although if you can get it fresh that's better.
about a cup of fresh parsley (italian if you can get it)
3 or so fresh garlic pods (not the whole clove unless you really like it garlic-y

put in a big pot and simmer on medium - medium low for 2 or 3 hours.

the key to this concoction is the turnip/parsnip combination which gives it an underlying sweetness.  it's good!

and you can add pretty much anything - alter as needed.  the key is just to simmer the veggies to their desired softness.  If you like your veggies a little crisper, you don't need to simmer as long.

Not the last meal I ate, but the last meal I cooked, last Saturday. I don't bother for myself, but I had a guest. So, roasted free range duck breasts (sprinkled with salt and coarse ground black pepper), roast potatoes, roast parsnips, Yorkshire puddings, Brussels sprouts, spring greens and red wine gravy. It went down very well with my guest. :)

A steaming hot bowl of menudo (made from beef stomach, feet and dried chilies), garnished with chopped onion, cilantro and jalapeno. Washed down with a Diet Coke!
