Thought I'd throw a bunch of sausages (Polish, Italian, Czech, German, etc) I picked up from my neighborhood butcher in the ol' crockpot with some peppers and onions tonite and have a sausage fest!

What's on your table tonite?

Well, since you asked...

Leftover turkey soup from the leftover bird. Boiled the carcass with water, onions, celery, garlic, picked the bones clean, added 'em to the soup along with fresh onions, celery and rice, and fresh thyme and sage. Good, hearty--but oddly (and surprisingly) bland.   Don't know A little extra salt and pepper has helped. I wonder whether removing some of the turkey fat removed some of the flavor? 

Is it too late to invite myself over to dinner???

Salt,

the scrouge of modern food!  Well not quite, but obese people with high blood pressure have to look out for that stuff.  When not using a bunch of salt in soups,I would try adding a bunch of garlic, a little acid (vinegar etc...), certain herbs such as oregano and chili pepper.  I don't generally use Cumin in soup, but I bet that would work as well.  I was surprised at how good a low salt chicken soup tasted the other day.

I had a chicken sandwich tonight, with a chocolate turnover!

Grilled some rib-eyes marinated with salt, pepper, garlic & Olive oil. Homemade biscuits, spanish rice & corn. and I`m stuffed.

Had a bowl of spicy chicken soup and some leftover turkey enchiladas.
My mother-in-law made some red chile sauce which made for some scrumptious enchiladas!!!!!!!!!
Like turkey,  even better a couple of days later.

Spiced the soup with some of my wife's grandpa's chile salsa.
Hooboy that stuff is YUMMY!!!!!  And HOT!!!

Lucky for me, Grandpa shared the recipe with me so I can make it on my own.

Oh yeah!

Mission brand has two new dinner kits--I tried the chicken caesar wrap kit but used flatiron steak instead of chicken breast.  Everyone loved it.

Ronnie R. might be proud of me for this,  although I could NEVER come close to his mastery of soups & the culinary arts in  general!

BUT!!

I made a butternut squash bisque with crab that rocked!!  First time trying a new recipe and I'm pretty happy with the result.
Even my 13 yr old daughter dug it!

WOOHOO!!!!

Also made some beef & chicken fajitas for the kids.

Not much of anything left!
Good sign.

Good quality stewing steak, onions, garlic, carrots, bay leaves, bit of a cheat by adding a "beef casserole mix" of herbs/stock, and a healthy dollop of port (I'd run out of red wine) gave it a comforting richness. Enough for several days, which is just as well seeing as I'm currently snowed in.

I'm going to throw a couple of chix breast into a slow cooker and add a bunch of veggies. Not sure what I'll season with; oregano looks like it'll be in there, along with garlic. Starting to stay away from the potatoes (which irritates the better half but pleases the doctor...) so probably long on onion and carrots.

Last night I cooked burgers on a 'Foreman' grill.

1 lb 90% lean ground beef
1 lb mild Italian sausage
One piece of bread
One egg
Salt and Pepper

Mix ingredients in a bowl, form patties (I made 7 from this), cook to medium or so.

It's based on a recipe I got from a Jamie Oliver book and it works very well on the 'Foreman' grill. I'm not sure I'm sold on this mix of flavors.

We're still working on cherries for dessert.

It's a conventional gas grill. I put the pizza on a sheet till the crust browns, then turn the grill off & slide the pizza on bare grill for an instant, then back on to the sheet and immediately transfer onto a clean brown paper bag.  Cool & cut.

Lol. I've been making my own for so long, it's second-nature. I make my own braided bread sticks on demand as well and bake in a little toaster oven. Brush witb melted buttah and sprinkle with Kosher salt. Incredible with salad from garden with blueberries or strawberries or raspberries - whatever is ripe outside my back door.

Tonight I did skewers of haddock, mushrooms and pineapple.  Served with Jasmine rice.  The hummus and baba ganoush didn't really fit, but I had to do something with the eggplant I grilled yesterday.

I certainly hope your free-camping and poaching was on public land and not private, could have been dangerous. Other than that...sounds like a helluva time!

I gave up on the oven about two weeks ago. It makes the house too uncomfortable. Grilling out side, the Foreman thing inside, sandwiches and salads are the menu until it cools back down, probably September. My wife has a couple of really tasty crust recipes that we'll use then.

I gave up on the oven about two weeks ago. It makes the house too uncomfortable. Grilling out side, the Foreman thing inside, sandwiches and salads are the menu until it cools back down, probably September. My wife has a couple of really tasty crust recipes that we'll use then.

No. None of it would fit in the toaster oven. I use the baking tray that came with it and some glass casserole pans that I bought because they fit. I got rid of all my "non-stick" cook-ware a long time ago. I have a nice assortment of cast iron. I can make darn near anything in a cast iron skillet with a cast-iron lid when needed.

Carrie and I had some from the farmers market that was as sweet as candy!

And get this - no pee smell!

It's the only time asparagus hasn't given me a floral aroma reminder!

Chicken casserole. Free range chicken breasts, onions, carrots, garlic, mushrooms, potatoes, bay leaves and, the one cheat, a "chicken casserole" mix containing cornflour and various herbs/spices. I would have added some white wine, but if I had, there wouldn't have been any left to drink. :)

I was in an nice restaurant yesterday with family. Long time since last time. I don't know the English name on the food, but it was so good, I could nearly not believe it.  Amazed The meat was from lamb. The vegetables and potato was made so special, it could be a meal in it self. Its the best I ever tasted.

After such a meal, you feel really well and relaxed!! Until the bill was on the table. But in fact it was worth it  :)

Last night had a nice roast chicken (raised locally), slowly cooked on the BBQ with a can of beer in the middle, and fresh herbs from our garden; fresh local "candy cane" beet salad with fresh local fennel; fresh local steamed green beans; fresh local heirloom tomatoes/fresh local cucumbers/fresh local basil with basalmic vinegar/olive oil dressing; fresh homemade raspberry cobbler with our own raspberries; local rose' of Sangiovese wine. Followed by a local Port wine afterwards.

I gotta tell you, I so much do NOT want to buy grocery store produce or meats again!!! This 'locavore' deal is awesome...such flavors cannot be found in a store. We shop farmers markets all season long, buy locally raised, grass-fed beef, buffalo & lamb, and grain-fed chickens. Of course, we have awesome fresh caught local (regional anyway) Pacific salmon, halibut, ling cod, shrimp, crab...what a bounty.

Tonight we're having fresh ling cod fish tacos with locally-grown cabbage, fresh avacados and homemade salsa, with locally-made tortillas, topped with a squeeze of fresh lime juice. Locally brewed beer...mmmmmmm :) :) :)

If I smoke a turkey, I generally will split it (removing the backbone for soup) so placing the can inside the cavity isn't an issue.  What about using Foster's as part of a brine to soak the bird in before roasting/smoking/BBQing?

No, not a highjack - it was what was for supper on Wednesday Aug 1, 2012.
My wife and I ate out. Very pleasant afternoon... waiting 1.5 hrs in traffic, and another 30 mins to get to the counter. Ironically, it was VERY pleasant. No one was upset at the wait.... everyone was polite... "thank you", "excuse me", "how are you today"... "nice to see you".... there was a very sweet spirit in the facility. Good!

Fast Food sux,... yea,... but chicken is better than a greasy hamburger..., eh? Don't know

Last night - Ham Sammich, with lettuce, mayo, salt, pepper, and freshly sliced 'mater out of the garden.  Good!

cajun red beans and rice.  I have a recipe from down south that is killer. It just takes 4+ hours to cook.

Pressure cooking it right now for 15 minutes to soften the beans and hamhock.

It smells wonderful in here. Shallot, garlic, hamhock, andouille, green onion, one bell pepper, black pepper, chili powder with new mexicos in it, cajun seasoning, parsley, oregano, celery etc.....

Ill be eaten good all week. it makes a couple of gallons of beans. I use small reds not kidneys. The 2 beans I dont care for are kidneys and mayacobas. small reds are great!

Sounds great!!  There's nothing quite as satisfying as eating a successful dish that takes a long time to make.  Having done it lots of times (I use bacon in several potato dishes), I'd suggest doing the bacon in a mini grinder.

Sunday I whipped up a great Goat Cheese Raviolis with alfredo sauce and fresh bacon crumbled on top.
Tonight we had a veggie bowtie pasta with artachoke hearts, cannalinni beans and a hot pepper and roasted garlic sauce. Oh Yeah !!!

Pork Gyoza, with 1/2 a blueberry muffin for desert.  This brand of gyoza actually taste more Japanese than Chinese.  Many "gyoza" are more like chinese pot stickers.  The flavorings and dough is different.

I'm in a King Crab fog!!!!!

Got some FREAKIN HUGE  King Crab legs at Costco today for our Christmas Eve dinner.
GAWD they were good!!!!!!

Nicely steamed with a chunk of sour dough bread & an Heirloom tomato & mozzerella salad with a topping of basil infused olive oil.
Lastly a German black lager beer.



Now for tomorrow....

Crispy oven roast duck with German style red cabbage,  kale & maybe some fingerling potatos.
And a nice Reisling.

Then for desert,  a fresh, home made poppy seed stolle.

Sorry to gloat,  maybe.....

My father's family used to do the twelve varieties of seafood for Christmas Eve dinner.  Christmas Eve is also my wife's birthday.  I need to do something nice, even though I can't count to twelve.  We did three.  Clams, scungilli, and scallops in a white sauce over linguini, with a cabbage salad on the side.  It was served with a local, naked Chardonnay.

It all sounds and looks delish.

We did Irish stew with venison instead of beef, with lotsa onions carrots mushrooms barley etc.  With a cheap grocery store Paisano.  Even my high school age daughter filled up on it and it's not easy to find something she likes.  Nobody left the table early!

I made split pea soup tonight.  Swedish recipe for yellow split peas which I used for green split peas.  1# peas, swedish ham cubed (no smoke or sugar in the brine), carrots, celery, garlic, pepper, marjoram and some ground ginger.  It was quite good tonight it will be excellent tomorrow.  My wife is sick so this hit the spot.

I made my first roast beef tonight!  It was a New York strip roast, and I made it using a port and mustard sauce that seems to be popular on the web.  It came out great, even my wife, who isn't crazy about steak, loved it.  I make steaks frequently for myself using a similar method (seared in a cast-iron pan and then finished in the oven), and was surprised at how much differently the NY roast tasted compared with a NY steak.

Sides were simple but specialties of mine, sweet carrots and mashed yukon golds.

If the shops co-operate this morning, I'll be serving prawns with lemon and crusty bread, followed by a decent cut of free range pork roasted with trimmings, and Creme Brulee which is already waiting in the fridge. I've got some beef and barley soup in the slow cooker for tonight. Got the recipe from an "America's Test Kitchen" Slow Cooker magazine. Smells great!

Dang, that was good!The beef was fall-apart tender after 9 hours on low. The missus and kids loved it, too.

No food porn for us tonite. More like food documentary. Almost a miniseries.

Leftover hambone, no, not making split pea soup again, but rather just a ham vegetable soup.

Boiled the hambone with some aromatics, added some diced browned pork, a bunch of fresh veggies (peppers, onions, celery, brocolli florets, cauliflower, pea pods, chili peppers, etc).

Can't wait!
